Across specialty coffee capitals from Melbourne to Copenhagen, a quiet revolution is unfolding. Manual filter brewing — once dismissed as your grandmother's drip pot — has become the method of choice for discerning coffee drinkers. The reason is simple: no other method gives you such direct control over every variable that shapes flavour in the cup.

Manual Brewing vs. Machine: What Makes It Special
An automatic coffee machine is convenient, but convenience comes at a cost. Machines fix the water temperature, the flow rate, and the contact time — leaving you with a one-size-fits-all extraction. Manual brewing flips that equation. You decide how fast the water meets the grounds, how long it stays there, and how the slurry moves through the bed.
The result? A cup you can fine-tune to your exact taste preference, batch after batch. Once you understand the variables, brewing becomes less of a recipe and more of a craft you own.

Extraction Theory: The Science in Your Cup
Every cup of filter coffee is an extraction — you are dissolving soluble compounds from ground coffee into water. Understanding what you are extracting, and how much, is what separates a good brew from a great one.
TDS (Total Dissolved Solids) measures the concentration of your finished brew — how much coffee material actually ended up in the water. A well-brewed filter coffee typically lands between 1.15% and 1.35% TDS. Below that range, the cup tastes watery and thin. Above it, the flavours become muddled and heavy. We measure TDS with a refractometer, and you will use one during the course to see your numbers in real time.
Extraction yield tells you what percentage of the dry coffee grounds you actually dissolved. The sweet spot sits between 18% and 22%. Within that window, you get the full spectrum of sweetness, acidity, and complexity that the bean has to offer.
Step below 18% — under-extraction — and you will taste sourness, a thin body, and sometimes an unpleasant salty note. The water simply did not have enough time, heat, or contact to pull the good stuff out. Step above 22% — over-extraction — and bitterness takes over, often accompanied by an astringent, drying sensation and a hollow finish. The water pulled out too much, including compounds you did not want.
During the course, we work through the brewing control chart — a visual tool that maps TDS against extraction yield. It shows you exactly where your brew falls and which variable to adjust to move it into the ideal zone. Once you learn to read it, diagnosing a bad cup becomes straightforward rather than guesswork.
Grinders: The Most Important Piece of Equipment You Own
Ask any specialty coffee professional what single upgrade makes the biggest difference at home, and the answer is almost always the grinder. Not the brewer, not the kettle — the grinder. Here is why.
Blade grinders chop beans unevenly, producing a mix of dust and boulders in the same batch. The fine particles over-extract (bitter), the coarse ones under-extract (sour), and the cup becomes a muddy compromise. If you are using a blade grinder, upgrading is the single fastest path to better coffee.
Burr grinders crush beans between two abrasive surfaces set at a precise distance, producing far more uniform particle sizes. Within burr grinders, there are two main designs:
- Conical burrs — a cone-shaped inner burr sits inside a ring-shaped outer burr. They produce a slightly wider particle distribution, which some brewers find gives a more complex, layered cup. Most hand grinders use conical burrs.
- Flat burrs — two parallel, disc-shaped burrs face each other. They tend to produce a tighter, more uniform particle distribution, which translates to cleaner, more focused flavour clarity. Many competition brewers prefer flat burrs for pour-over.
Hand grinders like the Comandante C40 or 1Zpresso JX-Pro deliver exceptional grind quality at a fraction of the cost of a comparable electric grinder. The trade-off is effort — you are grinding by hand for 30 to 60 seconds per dose. For single-cup brewing at home, many of our course participants find that perfectly acceptable.
Electric grinders such as the Baratza Encore or Fellow Ode offer convenience and consistency without the manual work. The Encore is the workhorse of home brewing — reliable, well-priced, and good enough for most filter methods. The Fellow Ode targets pour-over specifically, with flat burrs and a design that avoids fine retention.
The key insight we teach in the course: grind consistency matters more than the grind setting number on your dial. Two grinders set to "medium" will produce very different particle distributions. Learning to evaluate your grinder's output — and adjust your recipe accordingly — is more valuable than memorising a number.
Water Chemistry: The Invisible Ingredient
Coffee is roughly 98% water. If your water tastes off, your coffee will too. But beyond taste, the mineral content of your water directly affects how extraction works.
For brewing water, a TDS between 50 and 150 ppm is the working range recommended by the SCA (Specialty Coffee Association). Within that window:
- Calcium and magnesium are the primary extraction agents. They bind to flavour compounds in the coffee and pull them into solution. Magnesium tends to highlight bright, fruity acidity. Calcium brings out heavier, rounded body.
- Bicarbonate acts as a buffer, neutralising acidity. Too much bicarbonate and your coffee tastes flat and chalky. Too little and acidity runs unchecked, making the cup sharp and sour.
Why distilled water makes bad coffee: with zero minerals, there is nothing to drive extraction. The water passes through the grounds without pulling much out, leaving you with a weak, flavourless cup — no matter how good the beans are.
Why very hard water is also a problem: excessive minerals over-extract harsh compounds and the high bicarbonate kills all the bright, lively notes that make specialty coffee worth seeking out.
If your tap water falls outside the ideal range, the simplest solution is Third Wave Water — mineral sachets you add to distilled or reverse-osmosis water to hit the target profile. We use it during the course so every participant brews with the same baseline, and many take the concept home afterwards.
Brewing Methods Compared
During the course, you will spend hands-on time with each of these brewers. Here is how they differ — and why each one has a place in your kitchen.

The V60 rewards precision. Its large drainage hole and spiral ribs mean the water flows through quickly — your pour speed, pattern, and grind size all directly shape the cup. The Chemex uses a much thicker paper filter that absorbs oils and fine sediment. The result is an exceptionally clean, sweet cup — almost tea-like in its clarity. It is also more forgiving than the V60, making it a strong choice if you brew for multiple people. For an upgrade in clarity, try pairing it with Sibarist specialty filters.
The AeroPress is the Swiss army knife of coffee brewing. It combines immersion (steeping) with pressure (plunging), and its short brew time means it is nearly impossible to over-extract. Inverted method, standard method, fine grind, coarse grind — the AeroPress handles all of it, which is why it has spawned its own world championship.
The French Press is pure immersion brewing. The metal mesh filter lets oils and fine particles through, producing a heavy, rich cup with a lot of body. It is the least technique-dependent method — coarse grind, hot water, four minutes, plunge — but it is also the hardest to make clean-tasting.
The BRU Approach: Engineering Meets Craft
We do not teach a single "correct" recipe. Instead, we teach you how filter coffee works — the physics of extraction, the chemistry of water, the geometry of the brewer. When you understand the system, you can adapt to any bean, any brewer, any water source.
Think of it as learning to drive rather than memorising one route. Our instructors break down each variable, demonstrate its effect live, and then hand you the kettle so you can feel the difference yourself.
What to Expect During the Session
This is not a lecture. From the first minute, you will be brewing. Here is how the three hours unfold:
- Foundations (45 min) — We calibrate your palate with a guided tasting, introduce extraction theory, and set up your brewing station.
- Deep dives (90 min) — You rotate through V60, Chemex, and AeroPress stations. At each one, you brew multiple rounds, adjusting a single variable at a time: grind size, water temperature, pour pattern, water mineral content.
- Synthesis (45 min) — You design your own recipe for a coffee of your choice, brew it, taste it with the group, and refine. You leave with a personal recipe card and the confidence to keep experimenting at home.
Troubleshooting Your Brew
Even after the course, not every cup will be perfect — and that is fine. What matters is knowing how to diagnose the problem and fix it on the next brew. Here are the most common issues our participants encounter at home:
- Watery, weak coffee — Your extraction is too low. The most likely causes: grind too coarse, water temperature too low (below 90 C), or ratio too high (too much water for the dose). Grind finer first — it is the most impactful single adjustment.
- Bitter, harsh coffee — You have over-extracted. Grind coarser, lower your water temperature slightly, or reduce contact time. If you are using a V60, a faster pour will shorten contact time.
- Inconsistent cups — This almost always points to the grinder. If your grinder produces an uneven particle distribution, each brew will extract differently. Check your burrs for wear, and make sure you are not switching between fine and coarse settings without re-dialling.
- Slow drawdown (V60/Chemex) — The water is pooling on top and taking too long to drain. Grind coarser. Also check your filter — some lower-quality filters clog more easily. A gentle swirl after your initial bloom pour can also help settle the bed evenly.
- Fast drawdown — The water is rushing through without enough contact. Grind finer, or slow your pour to let the bed saturate properly. On a V60, pouring in tighter circles closer to the centre also increases contact time.
Equipment You Will Work With
Every station is equipped with the same tools we use behind our bar: Hario V60 drippers, Chemex carafes, AeroPress brewers, precision gooseneck kettles, refractometers for measuring extraction yield, and a selection of single-origin coffees roasted in-house. You do not need to bring anything — just curiosity.
