We spent months researching, visiting roasteries and trade shows, pulling shots on every serious contender we could find. We chose Slayer. That was years ago. On a standard nine-bar machine, grinding too fine causes channeling: water over-extracts some grounds, under-extracts others, and produces a harsh, uneven shot. This matters enormously for the kind of coffee we serve at BRÜ. Our single-origin beans from DABOV Specialty Coffee are light-roasted to preserve their origin character — the florals in an Ethiopian natural, the stone fruit in a Kenyan washed lot. These delicate flavors are the first casualties of aggressive extraction. Slayer's flow profiling lets us coax them out intact, which is why our espresso tastes noticeably different from what most cafes produce with the same beans.
Independent Brew Tanks: Why Temperature Matters
Temperature stability is one of the most underappreciated factors in espresso quality. A shift of just one or two degrees Celsius can push an extraction from sweet and balanced to sour or bitter. Many commercial machines use a single large boiler to supply hot water to all group heads simultaneously. This works adequately when the cafe is quiet, but during a morning rush — when every group is pulling shots back to back — the shared boiler struggles to maintain consistent temperature. On our Steam LP, each of the three group heads has its own dedicated 1.7-litre brew tank with individual PID temperature control, adjustable to a precision of 0.1 degrees Celsius. The logic is sound for high-volume chains and hotels — automation reduces training time and minimizes human error. Slayer takes the opposite philosophical position. Rather than automating the barista out of the equation, it gives them more direct, more granular, more analog control than any other machine on the market. The needle valve is a mechanical component rated for over one million actuation cycles. There is no software deciding when pre-infusion should end. There is no algorithm optimizing flow rate. Slayer was founded in 2007 in Seattle by Jason Prefontaine, a coffee professional who saw a gap between what baristas needed and what existing manufacturers were building. The founding principle was simple and radical: build a coffee company that happens to make machines, not a manufacturing company that happens to serve the coffee industry. Every engineer at Slayer's facility in Renton, Washington, understands coffee. Every design decision is filtered through the question of what produces a better cup. In 2017, Italy's Gruppo Cimbali — one of the oldest dynasties in espresso machine manufacturing, building machines since the 1940s — acquired a stake in Slayer. Gruppo Cimbali has the engineering resources to develop virtually any technology in-house. The fact that they chose to invest in Slayer rather than replicate its innovations tells you something important about the uniqueness of the needle-valve approach.
