We chose Ethiopia Karamo Washed for its exceptional balance between sweetness and structure, characteristic of the best chocolate-flavoured coffees from Ethiopia. This coffee demonstrates how complex a wet process can be when conducted with attention to detail and complete control over fermentation.
The result is a clean, velvety profile with pronounced notes of honey, dates, and stone fruit. Produced by the Gemeda Mude family in the Sidama region of Ethiopia at over 2,000 masl, this lot ranked among the TOP 5 in the Filter — Washed category, placing it among the cleanest and highest-quality wet-processed specialty coffees in Europe. The 74158 variety, grown at exceptional altitude on volcanic soil, develops a richness and depth rarely found in washed Ethiopian coffees.
Brewing Recommendation: Best enjoyed as a V60 pour-over or Kalita Wave filter. Pair with date cake or stone fruit compote to enhance the natural sweetness.
