Nicaragua Mierish

Nicaragua Mierish is produced on the La Huela farm at 1400m above sea level in the Matagalpa region. The coffee is from the rare Yellow Pacamara variety — a natural mutation of the classic Pacamara, in which the cherries ripen yellow and develop a brighter, gentler aromatic profile. The cherries are depulped and fermented carefully with temperature control, then dried on raised beds. The result is a coffee with elegant acidity and exceptional transparency of taste.
