Tasting Notes: Tropical Fruit • Cacao • Liqueur
An award-winning Ecuadorian Wush Wush lot with sparkling clarity and vibrant complexity. This is one of the rarest varieties in specialty coffee.
Produced by the Elder Family at El Dorado Farm in Loja, Ecuador. The experimental washed process begins with a 72-hour whole-cherry anaerobic phase in sealed bags, followed by depulping, a second 72-hour parchment fermentation, washing, and 10-day slow drying on raised beds. The result is a cup of extraordinary clarity — tropical fruit sweetness, rich cacao depth, and a smooth liqueur-like finish.
Brewing Recommendation: Best enjoyed as a V60 pour-over at 92°C. The complex fermentation deserves slow, attentive brewing.
