The Professional Barista Bootcamp is a full-day, intensive training programme built on the exact operational systems we use at BRÜ. This isn’t theory. This is the real workflow, pressure included.

What the Bootcamp Covers

  • Workflow architecture: Station setup, sequencing, and the rhythm of high-volume service. You’ll learn how to handle a brunch rush serving 300+ cups without bottlenecks.

The Five-Day Curriculum: From Foundations to Full Service

We structured this bootcamp as a five-day progression. Each day builds on the previous one, and by the end of the week you will have practised every skill required to run a specialty coffee bar at commercial pace.

Day 1: Foundations and Palate Calibration

Before you touch a portafilter, you need to understand what you are tasting. Day one begins with a structured cupping session where you calibrate your palate against SCA standards. You will taste coffees across the spectrum—from underdeveloped to over-extracted—and learn to identify the specific flavour markers that signal each defect. This is the foundation everything else rests on: if you cannot taste the difference, you cannot fix it.

The afternoon covers coffee science fundamentals. We walk through the journey from green bean to roasted coffee, how origin and processing method shape flavour, and what separates specialty-grade coffee from commodity. You will also learn basic bar anatomy—where every tool lives, why it lives there, and how station layout affects your speed during service.

Day 2: Espresso Mastery and Dial-In Protocol

Day two is about the espresso machine. You will learn our complete dial-in protocol: how to assess a new bag of coffee, set your dose, adjust grind size, and pull shots that land within your target extraction window. We use a VST refractometer to measure Total Dissolved Solids (TDS), so every adjustment is data-driven rather than guesswork.

You will practise adjusting grind settings in response to changing conditions—temperature shifts, humidity, bean age—because in a real café, the grinder you dialled in at 7 a.m. will not produce the same shot at 11 a.m. By the end of day two, you will be able to evaluate espresso like a professional cupper and make precise corrections in under thirty seconds.

Day 3: Milk Science and Latte Art

Milk is where most baristas plateau. Day three breaks milk texturing down to physics: protein structure, fat content, temperature thresholds, and how steam pressure affects microfoam density. You will practise on whole milk, oat milk, and soy milk, learning the specific technique adjustments each requires.

Once your microfoam is consistent, we move into latte art—not as decoration, but as a diagnostic tool. A clean rosetta tells you your milk texture, pour height, and flow rate are all correct. Day 4: Workflow Systems and High-Volume Simulation

Day four is where the bootcamp earns its name. We simulate a full brunch rush: ticket queues, simultaneous orders, split bills, dietary requests, and the pressure of a packed house. You will work the bar in timed rounds, starting at a manageable pace and increasing to peak-service volume.

Between rounds, we debrief. Where did the bottleneck form? Which hand was idle? Where did you break sequence? At BRÜ, our workflow is built so that your hands are never still and your eyes are always one order ahead. Day four drills this rhythm into muscle memory.

Day 5: Full Service Simulation and Assessment

The final day is a complete service simulation from open to close. You will set up the bar, calibrate the grinders, run a full morning service, handle mid-shift cleaning, and execute the closing protocol. Your trainer observes and scores your performance across extraction quality, speed, waste management, and customer interaction.

The assessment is not pass/fail in a traditional sense. It is a detailed performance review that identifies your strengths and the specific areas to continue developing. You leave with a written breakdown of your scores and personalised recommendations for practice.

The Equipment You Will Train On

At BRÜ, we do not train on entry-level machines. The equipment in our training bar is the same equipment we use in service, because muscle memory formed on a different machine is muscle memory you will have to relearn.

  • La Marzocco Linea PB: The industry workhorse for high-volume specialty service. Dual boilers, PID temperature control, and saturated group heads deliver the thermal stability required for consistent extraction across hundreds of shots. You will learn its maintenance rhythms, flush protocols, and how to read its behaviour during long shifts.
  • Mahlkönig EK43: The benchmark flat-burr grinder for single-origin espresso and filter. You will learn to switch between profiles, purge correctly, and understand why burr geometry affects flavour differently than conical grinders.
  • Mahlkönig E65S: Our house-blend workhorse. You will practise micro-adjustments for dialling in throughout the day and learn the maintenance schedule that keeps it performing consistently.
  • VST refractometer: Every extraction decision in this bootcamp is verified by measurement. You will learn to take accurate TDS readings and calculate extraction yield, turning subjective taste impressions into objective data points.
  • Acaia Lunar scales: Precision to 0.1g with a built-in timer. You will use these for every shot, learning to read flow rate in real time and identify channelling before it shows up in the cup.

Prerequisites

No professional barista experience is required. If you have completed our Home Barista Course or have basic familiarity with espresso preparation, you will hit the ground faster—but we have designed day one specifically to bring everyone to the same starting line. What matters most is that you are willing to work hard, accept feedback, and practise deliberately.

If you are completely new to coffee, we recommend attending one of our free cupping sessions beforehand. It is not mandatory, but arriving with a calibrated palate means you can focus on technique from the first hour.

Frequently Asked Questions

Do I need previous barista experience to join?

No. The bootcamp is designed to take you from foundational knowledge to professional-level skills. Day one starts with palate calibration and coffee science, so even complete beginners build a solid base before touching the espresso machine. That said, if you already have experience, you will get more from the advanced days.

How many participants are in each bootcamp?

We cap each session at six participants. This ensures everyone gets substantial hands-on time with the equipment and direct feedback from the trainer. With a La Marzocco Linea PB running two groups, you will pull hundreds of shots during the week—not watch someone else pull them.

What should I bring?

Comfortable, closed-toe shoes (you will be standing all day), a notebook if you like to take written notes, and an appetite for coffee. We provide aprons, all training materials, and cleaning supplies. If you wear contact lenses, bring your glasses as backup—steam can be uncomfortable after several hours.

Is the certificate recognised by the SCA?

The BRÜ Barista Bootcamp certificate is issued by BRÜ Specialty Coffee and documents your training and assessment scores. It is not an SCA certification. However, the curriculum covers and exceeds the practical skills assessed in SCA Barista Skills Foundation and Intermediate modules. Many participants use our bootcamp as preparation before sitting for SCA exams at an authorised training campus.

Can I book the bootcamp as a private session for my team?

Yes. We regularly run private bootcamps for café teams, hotel F&B departments, and corporate groups.
