Ethiopia Tamiru Tadesse

Ethiopia Tamiru Tadesse is a dry-fermented coffee from the 74158 variety, grown at 2400–2550m in the village of Alo, Bensa region, Sidamo. After harvesting, only the ripest cherries are passed through a hopper, leaving only the densest and highest quality. The cherries are depulped and washed without traditional fermentation, preserving the exceptional clarity of the cup. The coffee is dried on African beds for 3–4 days, followed by a 96-hour rest in a cool room to stabilize sugars and aromas, before returning to the beds for final drying to an optimal 11% humidity. The result is an exceptionally clean cup with prominent floral and citrus notes, a delicate sweetness and a silky texture.
