Ethiopia Tamiru Tadesse is a dry-fermented coffee from the 74158 variety, grown at 2,400–2,550 masl in the village of Alo, Bensa region, Sidamo. After harvesting, only the ripest cherries are passed through a hopper, leaving only the densest and highest quality.

The cherries are depulped and washed without traditional fermentation, preserving the exceptional clarity of the cup. The coffee is dried on African beds for 3–4 days, followed by a 96-hour rest in a cool room to stabilise sugars and aromas, before returning to the beds for final drying to an optimal 11% humidity. This meticulous post-harvest process, developed by farmer Tamiru Tadesse himself, ensures that every cup reveals the pristine character of the Bensa terroir — one of the most celebrated specialty coffee origins in Ethiopia.

The result is an exceptionally clean cup with prominent floral and citrus notes, a delicate sweetness, and a silky texture.

Brewing Recommendation: Best enjoyed as a V60 pour-over or Kalita Wave. Pair with lemon madeleines or a light floral honey to complement the citrus and floral character.
