Produced by Oscar & Francisca Chacón at Microbeneficio Las Lajas in Sabanilla, Costa Rica. The Black Diamond process combines natural aerobic fermentation in open containers with ultra-slow greenhouse drying under black plastic shade, preserving the delicate citrus and herbal character of this rare Typica Lima variety.
Brewing Recommendation: Versatile omni-roast — works beautifully as both espresso and filter. The clean citrus profile shines in pour-over.
